Fifteen Chocolate Brownies (Jamie Oliver)

Finally.. di hari minggu yang cerah ini Gw kesampaian juga bikin Browniesnya mas Jamie. Resep ini adalah resep asli yang dipake untuk Brownies di restorannya Jamie "Fifteen" di London.

"The real trick is to make sure you dont overcook them, otherwise they will go hard all the way through" Jamie Oliver.

Bikin brownies memang agak tricky untuk nemuin teksture yang pas. Beda dengan cake yang kita panggang sampai tengahnya sudah kering, untuk Brownie yang paling bagus adalah bagitu permukaannya kita sentuh dengan ujung jari sudah keras walaupun dalamnya masih agak basah, langsung keluarkan dari Oven karena sudah naturenya coklat untuk mengeras di temperatur ruangan. Baru deh kita bakalan dapet teksture brownies yang perfect!

Another tips from Jamie is to put crushed nuts like macadamias, pecans, walnuts or brazils. Dan Jamie favorite adalah dengan nambahin dried sour cherries (menurutnya they go so well with chocolate). Dan satu lagi, semakin kita make effort buat pake good-quality coklat, hasilnya pasti akan jauh lebih oke.

So let's get started!

Makes 8-10

Ingredients:
250 gr unsalted butter
100 gr Best Quality Dark chocolate (70% Cocoa solids) broken up
Optional: 150 gr dried sour cherries
optional: 150 g chopped nuts

80 g Cocoa Powder sifted
65 g Plain flour, sifted
1 tsp baking powder
350 Caster Sugar

4 Large free- range or Organic eggs

Optional for Serving:
Zest of 1 orange
250 ml Creme Fraiche

Directions:

Preheat your oven to 180C/350F. Line a 30cm/12 inch rectangular baking tin with greaseproof paper.
In a large bowl over simmering water, melt the butter and the chocolate and mox until smooth. Add the cherries and nuts if you're using them, and stir together.
In a separate bowl, mix together the cocoa powder, flour, baking powder and sugar, then add this to the chocolate, cherry, adn nut mixture. Stir together well.
Beat the eggs and mix in until you have a silky consistency.

Pour your brownie mix into the baking tray, and place in the oven for around 25 minutes. You dont want to overcook them so, unlike cakes, you dont want a skewer to come out clean. The brownies should be slightly springy on the outside but still goey in the middle. Allow to cool in the tray, then carefully transfer to large chopping board and cut into chunky squares. These make a fantastic dessert served with dollop or creme fraiche mixed with orange zest.

The result... I made 24 pieces of yummy brownies instead of 10 pieces! and i've got to admit its even much better than my 11 years old brownies recipe *LOL*
